Managing Director sweeps floors
Successful catering expert Cucina Restaurants Ltd, dispatched its senior management team to a Cambridgeshire school recently to be ‘dinner ladies for a day’. The typical Cucina ‘fresh thinking’ approach is part of an initiative which rewards the best Cucina Catering Team of the Year and allows senior managers to go back to the floor, getting a renewed insight into ‘life at the serving hatch’.
The Cucina catering team at Arthur Mellows Village College in Glinton near Peterborough won the Best Cucina Team of the Year for their high standards, skills and ‘can do’ attitude. Each member was given vouchers to spend and a day off at a spa together for a series of luxurious treatments. Champagne and a stretched limo greeted the team to whisk them away, leaving Cucina’s senior management team to cater for the 1,500 pupils at the College.

“This initiative is important to both our high standards and as a reward for achieving them. It is also a great chance for us to refresh our thinking! As a result we have been able to receive first hand reactions to our new menus for next term, and also to make small changes to improve the fantastic work that goes on at all of the Cucina catered restaurants around the country.
Most of the senior management team began their working life in a kitchen similar to the one at Arthur Mellows. We arrived at 6.30am to ensure we didn’t let the pupils down and really enjoyed our day speaking with the students and teachers and preparing and clearing the dining area. Sweeping floors and cleaning requires the same level of care as preparing fantastic food in the kitchens. I know this, as I did both again today!

Cucina’s professional and innovative approach includes appointing a Head Chef to oversee service and offering an educational food service which links the classroom to the kitchen.
Cucina, which now caters at 34 restaurants up and down the country, serves fresh food to nearly 30,000 pupils and takes on new contracts next term. Cucina emphasises fresh and locally sourced food and also helps the students understand the importance of food provenance.
