A Spanish cook joined the fiesta at the Chester Food and Drink Festival on Easter Monday taking the young chef title. Amador Parada, who was born in Majorca, beat off stiff competition on the Chester Taste Festival stage from two other young chefs. Amador, 23, sous-chef at The Morris Dancer, Kelsall, cooked pigeon with sautéed potatoes, vegetables and rhubarb.

TV chef Simon Rimmer packed in record audiences at the Taste Festival on Bank Holiday Monday. The sun continued to shine, as Simon, who appears on BBC2’s Something for the Weekend, treated the Chester Racecourse audience to two culinary demonstrations.
Simon cooked steak tartare, turbot stew with mussels in a creamy sauce and banana tarte tatin for the Chester crowd. In his second demonstration, Simon cooked a pea and pancetta lasagne, a rump of lamb with a potato scone and beetroot salsa and a melted chocolate pudding for dessert.

Cheshire icecream was a popular hit with capacity crowds at the Chester Food & Drink Festival this weekend. A new attraction this year was the Children's cookery classes.

Paul Taylor, of The Fat Loaf in Sale, Altrincham and Didsbury, who has cooked at the Chester Festival for the last three years, also gave two demonstrations. Paul cooked a confit of duck legs with Puy lentils and chorizo, a fish dish which included couli, salmon, red snapper, crayfish and brown anchovies and a dessert of brioche with cherries and orange marmalade, crème fraiche and mint. In his second demonstration, Paul cooked with food from the stallholders at the Festival, including devilled kidneys on toast with squashed tomatoes, a vegetable salad with purple sprouting broccoli dressed in pesto with chopped sausages from Jimmy’s Farm and a poached egg and a course of Menai oysters.

Leigh Myers, Executive Head Chef at the Grosvenor Pulford Hotel & Spa and Director of Food for the Chester Food and Drink Festival 2009, cooked Cheshire cheese twice baked soufflé with cooked beetroot and peashoots, lamb Provencale with couscous and a dessert of Tattenhall yoghurt mousse with figs and hazelnut brittle.

Headline chef Alan Coxon, who was voted amongst the top 10 TV chefs in the world in a recent BBC viewer poll across 100 countries, take to the Chester stage.
Food archaeologist Alan, who has created a Historic Vinaigres range which explores tastes and flavours that once adorned the tables of Roman Emperors and Medieval Knights, gave two chef demonstrations which involved members of the audience. Alan cooked a pyramid of meringue with raspberry cream and sponge sugar, an American key lime pie with cracknel and lime syrup and tuna fish marinated in herbs with peanut sauce.

Head Chef at Abode Manchester, Ian Matfin; who will be representing the North East in the Great British Menu on BBC 2, also gave a cookery demonstration. Ian, who worked under Michael Caines at the two Michelin-starred Gidleigh Park in Devon, cooked vegetable and herb soup, braised turbot with scallops, baby leeks and caviar and Goosnargh duck with orange chickory and black olive paint.
