Search for Cheshire's tastiest sausage
Chester and Cheshire based butchers are invited to take part in The Chester Food & Drink Festival 2008 Sausage Competition. The preliminary round of tasting to decide the best banger will take place on 31st January.
The discerning organisers of the Festival, who all profess to be partial to pork products, include Stephen Wundke, Chairman of the Festival and Carole Faulkner, owner of The Cheese Shop on Northgate Street.
Stephen Wundke said:
“Sausage making has come a long way since the Romans flavoured pork with fennel and pushed it into sheep’s gut. The judges will be looking for sausages that stand out from the crowd. There are some really interesting combinations of herbs and spices being created by Chester and Cheshire’s butchers. That’s not forgetting the basics: a sausage must be made with great tasting meat and leave you feeling satisfied.”
The top sausages will be selected to go into the final competition held during the Festival, which takes place this year at Chester Racecourse March 22nd to 24th 2008, Easter Saturday to Easter Monday.
Last year’s winner of Chester and Cheshire’s Best Sausage was David Joinson’s pork and leek sausage, normally on show at Chester Market.
David Joinson said: “The thing that makes a great sausage is the pride of understanding how to serve it to the British public and their liking of the taste that the pork brings to their mouths. Of course, it’s important to use the best ingredients, all of which we source locally. We’re hoping to continue last year’s success with a new sausage that should get the taste buds watering.”

February will see the start of the Festival celebrations with preliminary judging to find the four finalists for the Young Chef of the Year “cook off’ that will take place during the Festival. Also, there will be the announcement of the schools competition for Cheshire Junior Chef of the Year.
February will also see the staging of the annual Cheese Rolling competition on February 26th with increased teams, street stalls and live music, leading up to March when the Festival begins.
The Gala Dinner and awards ceremony will ensure more than 400 people sample a gourmet menu sourced from leading producers in the North West. This is likely to be held on Tuesday March 25th 2008.
